Pressbooks is a great option. I wrote a white paper of sorts on e-textbooks a couple of years ago – the last two pages list different options for creating your own ebooks: https://docs.google.com/document/d/1me_5uK0uWDrs8fx5Yv5G8mnUklusHXE83nMxk_c4k9g/edit

Such as BookType, Readium, Widbook, and other WordPress-based solutions like Digress.it and Commentpress.
